Don’t take this as a fact, but this is my theory on this. The bottle is made of fairly thick plastic, so it won’t implode easily. Even after the holes are poked, water is unable to flow through them because in order for the water to exit the bottle, air must enter, or the space must get smaller (when the bottle implodes on itself). The holes are small enough where both the water and air are unable to pass each other, and the plastic is strong enough to be able to withstand any sort of change in air pressure.

The water escaping will create a vacuum so can't escape. When you open the lid it allows more air to flow in to fill the gaps so water can escape.

It works because the air in the top of the bottle can't go anywhere, so the water can't leave because if it tries to the presure of the water would increase so it is at a standstill. When you open the cap more air can flow in, releasing pressure and allowing the water to flow because of gravity
